Chinese food, oh how I’ve missed you. Ever since I was diagnosed with celiac disease, I’ve wanted nothing more than to call up the local Chinese restaurant and get a huge box of fried rice.

Not only is gluten completely off my menu, but I’m trying to limit my carb intake as well. While I’m not considered keto, I do try to not go overboard on carbs. In order to control myself, I need a lot of recipes that trick me into thinking I am eating carbs!

This recipe is perfect for anyone who has celiac disease, on a ketogenic or low-carb diet, or just wants to add more veggies to their meal plan!

Healthy “Fried” Rice – Gluten Free, Keto, Low Carb, and Vegetarian

Ingredients

  • 4C Cauliflower Rice (I buy it pre-riced)
  • 2C Shredded Carrots
  • 1C Snap Peas
  • 1C Bean Sprouts
  • 1C Vegetable Broth
  • 3 Eggs
  • 1/4C Coconut Aminos or GF Soy Sauce (opt for low sodium if possible)
  • 1 clove of garlic
  • 2TBS Olive Oil
  • Salt, Pepper, and Sriracha to taste

Instructions

  1. Turn stove on to medium-high heat and add olive oil. Let olive oil heat up for about 1 minute.
  2. Add all of the veggies, bean sprouts, and garlic to the pan and toss until they are coated with olive oil.
  3. Stir in vegetable broth, cover, and cook for 8-10 minutes. Toss about halfway through.
  4. Push mixture to one side of the pan, and add eggs to the clean side of the pan. Scramble the eggs, and the mix them in with the rest of the mixture.
  5. Stir in coconut aminos, seasonings, and sriracha.
  6. Eat alone or add in your favorite meat!

This makes quite a bit of food, which is great because I love leftovers. If you aren’t a huge leftover person, you can cut the ingredients in half.

Have Some Fun & Experiment

Really though, this meal is extremely versatile. You could add more snap peas and fewer carrots. You could throw in a cup of peas or broccoli slaw with an extra splash of vegetable broth.

It pairs well with chicken, crab or whatever you usually eat with your fried rice. If you are vegan, get rid of the eggs and you have a vegan dish!

This is truly a meal to have some fun with! So experiment, and find a combo that you love!
