It’s the new year, and just like everyone else, I am trying to work on losing a couple of pounds. I’ve been sensitive to dairy ever since being diagnosed with celiac disease, so one of my big goals this year is to really cut down on dairy consumption.
Luckily, this is a pretty easy task with brands like Lakeview Farms. One thing I love to snack on when I have a sweet tooth is some pudding. They have dark chocolate, vanilla, and swirl and they’re all so good. (Dark chocolate is my fav!)
While I love these pudding cups on their own, I like to spice things up and keep things interesting. One of my biggest downfalls is ice cream. I could literally eat ice cream every day, so obviously I wanted to create a sweet, frozen snack I can have that will taste just as good as ice cream but dairy-free and gluten-free.
These pudding pops taste just like a fudge pop, maybe even better to be honest. They are so easy to make, which makes it that much better. So, let’s get to it then!
The recipe below is inspired by the one on Lakeview Farms’ website.
Ingredients:
- Lakeview Farms®Vanilla or Dark Chocolate Almondmilk Pudding 4 pack
- Sprinkles (optional)
- Syrup (optional)
- Popsicle mold (I like this popsicle mold from Amazon)
Instructions:
- Scoop pudding into the popsicle mold.
- Add sprinkles (make sure to leave some space, sadly you can’t see my sprinkles)
- Freeze for about 4-6 hours
- Top with chocolate syrup (optional) and enjoy!
Bonus tip: I make my own chocolate syrup by mixing honey & cocoa powder. I don’t have an exact formula, but something you can play around with if you want!
