It’s been awhile since I’ve shared one of my recipes on here. Lately, I have been eating a lot of the same things over and over. Needless to say, I’m bored. If I’m bored, then I’m sure some of you are bored too.
Cooking and baking are passions of mine, and I love creating healthy recipes that just about anybody can enjoy! One of my goals with this blog is to make living a healthy life (mentally & physically) as simple as possible.
I’m going to make it a priority to start adding 1-2 recipes per week for you to enjoy! If there’s something that’s difficult or unhealthy that you want a simple recipe for, let me know! I love a challenge, and have done well to make simple & healthy copycat recipes of everything I love!
Healthy Chocolate Chip Cookies
Anyone else get sweet cravings like I do? As someone with celiac disease, it can be challenging when I have a strong craving for baked desserts. That’s why I created this bad boy! It’s easy, quick, and you probably already have the ingredients you need!
P.S. Since the dough is egg free, you can feel safe enjoying it raw!

These guilt free cookies are perfect for when you're craving something sweet! Perfect if you love soft, fluffy chocolate chip cookies!

Ingredients
- 1 cup gluten free flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/4 cup honey (agave nectar if vegan)
- 4 Tablespoons creamy peanut butter
- 1 mashed ripe banana
- 1/4 cup mini chocolate chips or cacao nibs
Instructions
- Preheat oven to 350° F
- Prepare baking sheet with parchment paper
- In a medium bowl add the flour, baking powder, and salt. Mix together.
- Stir in the vanilla extract, honey, peanut butter, and banana until everything is fully combined.
- Fold in the mini chocolate chips.
- Scoop about 1 Tablespoon of dough and mold into a cookie shape with your hands.
- Bake them for 8-11 minutes, after they are golden brown and have risen.
