Eating healthy is boring if you’re not experimenting, let’s be real. You can only eat grilled slamon and salads for so long before you lose it. This is why, pizza casserole was born. (Though I do enjoy a good regular pizza here and there. Balance, ya know?)

One of my passions is taking my favorite foods and making them indulgent and healthy! If you’re anything like my boyfriend, you need your veggies to be sneaky! (Or loaded with cheese!)

Well, I experimented and finally created it – Pizza Casserole!

My boyfriend says it’s his favorite meal I’ve ever cooked, so obviously, it’s pretty amazing. You know it’s real when you get the man stamp of approval!

Ingredients:

  • 2 cans of tomatoes or 2-3 cups freshly diced
  • 2 cups of veggies (I chose cauliflower, broccoli, and peppers)
  • 1 onion
  • 1lb ground turkey (or lean ground beef)
  • Pepperoni
  • Cooked bacon
  • Mozzarella cheese
  • 4tsp olive oil
  • Garlic
  • Salt, pepper, and Italian seasonings to taste

(I personally use turkey pepperoni & turkey bacon, but either is fine!)

Instructions:

  1. Pre-heat oven to 400 degrees F.
  2. Rinse and drain tomatoes, set on paper towel to blot excess water. Then, place them in your casserole dish or 9×13 pan.
  3. Sautee garlic and onion in olive oil. Add ground turkey and cook until a medium brown color. Season with salt, pepper, and Italian seasonings. (I used about 1tbsp Italian seasoning, and 2tsp of salt and 2tsp pepper.
  4. Remove ground turkey mixture, and roast veggies in the pan for about 5 minutes, depending on your preference.
  5. Place ground turkey mixture on top of tomatoes. Place roasted veggies on top of ground turkey mixture. Add a layer of cooked turkey bacon.
  6. Spread out 1 small bag of mozzarella cheese over the bacon.
  7. Add turkey pepperoni to top of the cheese
  8. Cook 25 minutes or until the cheese is melted and starting to brown. Serve hot, but don’t burn your mouth because you’re too excited to eat this deliciousness! 😉

And that’s it! You can pretty much customize this pizza casserole recipe however you like. Think about what you’d usually put on a pizza and go from there. Next time, I think I’m going to do bell peppers and zucchini to see what that’s like.

Remember to load it up with veggies if you’re trying to stay within a calorie deficit. Idk about you but I can eat a lot of pizza anything, so sneaking in a ton of veggies is a must for me. Big portions without ruining my hard work are necessary.

Last little tip, sprinkle some Flavor God Pizza seasoning on the veggies for an even more intense pizza flavor. (And then sprinkle it over your whole life, because… pizza.)
